Domaine de Cabrol is located a few kilometers north of Carcassonne, and produces wines proudly bearing the Cabardès appellation. The estate covers 125 hectares, but only 21 are reserved for vines. The winemaker

History


Domaine de Cabrol has its roots in a terroir where vines have been grown since the 16th century. These roots are rather noble if the past is anything to go by: the Lord of Aragon is said to have owned the estate before the French Revolution. The latter caused labor problems, and then it was the turn of vine diseases (phylloxera, powdery mildew and downy mildew) to cause further difficulties for the plots. A century later, Claude Carayol took over the estate and decided to adopt integrated viticulture. Since the 1990s, fewer inputs have been used, and listening to the needs of the vines is paramount. In 1999, Claude Carayol was rewarded with the recognition of Cabardès wines as an AOC.

Preserved ecosystem


The 125 hectares that make up the estate are decorated with olive trees, garrigues, almond trees... A preserved and diversified ecosystem that allows the 21 hectares of vines to flourish. Visiting the estate takes you on a unique experience, where the well-being of the land seems to be the goal Claude and Michel Carayol have set themselves. These two men have taken advantage of grape varieties such as syrah, grenache, cabernet sauvignon, cabernet franc, côt (malbec) and fer servadou to produce wines with a beautiful Mediterranean typicity. The white wines are greedy and easy to drink, while the reds are more rustic, dense and spicy... A domaine not to be missed!
