Vin de Pays des Côtes Catalanes is part of the world's largest wine production zone, belonging to the Languedoc-Roussillon wines, of which AOCs are the most numerous.terroir: limestone, clay-limestone, schist.vinification: traditional. 100% de-stemming, 2 to 4 weeks maceration. Indigenous yeasts. No enzyming, no chaptalization, no acidification.Ageing: 10 months, 20% in barrels, 80% in vats. Bottling: no fining or filtration.Tasting notes: on the nose, the wine opens with notes of blackberry, raspberry and wild blueberry, framed by sweet spices and a touch of licorice. The palate is immediate thanks to a supple yet dense body, highlighting silky tannins that lead to a seductive finish."
