Method of cultivation and vinification: Grapes ripe on the fruit, harvested by hand. The grapes are sorted to remove the few herbaceous intruders resulting from gentle de-stemming, placed in vats, undergo 24-hour cold pre-fermentation maceration to extract the fruit, temperature-controlled fermentation and maceration, and light punching down (18 to 24 days depending on the vat). Aged in stainless steel vats. Vinification: Hand-harvested at daybreak (cool temperatures ideal for white wine vinification), light whole-bunch direct pressing, recovery of run-off juice rapidly at low temperature, light settling. Temperature-controlled fermentation in stainless steel tanks (50%). Malolactic fermentation blocked. Aged on fine lees for 5 months in Saury wooden barrels, then lightly filtered at bottling. Everything is done to obtain an aromatic, powerful southern white that retains its freshness and minerality.
