The work begins in the vineyard, with a selection of the plots best suited to producing this type of wine. Most of the grapes are harvested by hand. The harvest is sorted twice, in the vineyard and in the cellar, to ensure that only the best grapes are kept. Vinification is traditional, with the harvest de-stemmed and placed in vats for a maceration period of 3 to 4 weeks. After pressing, a third of the wine is aged in barrels for 9 months, while the other part is aged in vats to preserve its fruity character (malolactic fermentation is completed on all the wine).
