Harvesting is triggered by ripeness checks, analysis of the polyphenols contained in the grape skins and daily tasting of the grapes as harvest approaches. Picking healthy, ripe grapes is the key to achieving the highest quality. Harvesting is done by hand, and the grapes are brought to the winery within the hour using comportes. The grapes are sorted and destemmed before being placed in temperature-controlled vats. Each grape variety is vinified separately. Maceration lasts between 20 and 25 days. At the end of winter, the wines are transferred to new 225-liter barrels for a stay of between 12 and 16 months in the magnificent Hospitalet winery (2,000 barrels). The fine lees are stirred periodically. The best barrels of each grape variety are selected and blended to produce this cuvée.

The intense nose is dominated by aromas of spices and red fruit (strawberry).
