In a few words ...
The harvest date is set, grape by grape, only when the grapes are at optimum ripeness and after daily tasting of the berries. The hand-picked grapes are pneumatically pressed, with the presses separated as soon as they arrive at the winery. After a light static settling, the juice (100% of it) undergoes alcoholic fermentation in barrels (temperature control helps preserve freshness and aroma integrity). Barrel ageing lasts between 7 and 8 months until the spring equinox, with regular stirring of the lees (for two months). After light fining, the wine is bottled.

Bright, deep yellow-gold color.
Aroma
Very expressive nose with sublime depth, aromas of dried apricot, toasted almond, very floral perfume of hawthorn and broom.
