The winemaker

Before belonging to Daurat-Fort family, New Castle happened in prestigious hands as Pope Benedict XII in 1334. In 1834, the Fort Chavanette families and redeem the property. Elise Chavenette adopts Augusta Daurat marries Fort Augustus and creates the domain unit. Today, Jean Daurat-Fort lives on the estate with his wife, his mother, his sister and his son, Jean-Rémy, who works with him on the castle. The New Castle vineyard covers 76 hectares, in a valley, sunny, with steep slopes on a mosaic floors that allowed the adaptation of each variety in its field of election. The varieties that fit into the development of Fitou are black Carignan 50%, the 35% Grenache, Syrah and Mouvrède. The amber Rivesaltes and out of age are composed of Grenache Blanc, Grenache gris and Maccabeu. Grenache Noir is the only variety of Rivesaltes (maceration fortification of grain), tiles and rancios. Muscat de Rivesaltes has two varieties: Muscat small grains (round and white) and Muscat of Alexandria. In New Castle, raising Fitou and Rivesaltes is done in oak barrels with regular topping up.
