Le Cellier des Demoiselles is the story of the young women from the village who, in 1914, not only replaced their men at the front, but also profoundly changed our way of seeing things.
They taught us that making wine means bringing out the emotion of our terroir, the beauty of our landscapes, the scent of our flowers and the sweetness of our sun.

The winemaker
A cooperative founded in 1914 in Saint Laurent de la Cabrerisse, near Carcassonne, Cellier des Demoiselles has an atypical history. It was created at the start of the First World War, and named in tribute to the young women of the village. Replacing the men who had left for the front, they continued the work of wine production, preserving and maintaining the vineyards. They also put their vision of winemaking into cuvées that express all the beauty and typicity of this southern French terroir.
Situated in the heart of the Corbières-Minervois vineyard region, the land extends over the terroir of the Boutenac appellation and benefits from a warm, dry climate. They benefit from a south-east exposure, ideal for growing vines and ripening grapes. The entire vineyard is run according to an eco-responsible approach, and has been awarded the "organic" and "HVE" (High Environmental Value) labels.
160 winegrowers work together on the vineyard, united by the same passion for vineyard work and the common desire to produce quality wines. The organization is based on cooperation and is committed to preserving short circuits and promoting local associations and terroir.
Cellier des Demoiselles' cuvées are as varied as the men who produce them. Some are fruity with a rather floral aromatic bouquet, others express all the power and character of the terroir. The domaine produces wines in all three colors, and many vintages have won awards.
Domaine des Vals premium 2019 - Cellier des demoiselles is a gourmet, fruity cuvée with aromas of black fruits, wild strawberries and blackcurrants. It's a buddy's red wine, classed as a pleasure cuvée with a lovely structure, both full-bodied and oaky. Offered at a soft price, it nevertheless offers the power of a quality Corbières and has won three medals.
Boutenac des demoiselles , 2017 is a red wine with a deep, intense color. Made from sustainable Syrah grapes, it offers a fruity nose with spicy notes. It has a supple structure with coated tannins and a long finish.
Chardonnay des Demoiselles, 2020 is a Vin de Pays d'Oc appellation cuvée. Fermentation is carried out at low temperature to preserve aromas, and the wine is then aged in bottle. It has a brilliant light gold color and a fruity nose with hints of honey. It's a well-balanced, lively wine with an opulent attack on the palate.
Blanc des demoiselles, is a wine in the Corbières appellation, made from a blend of Grenache Blanc for half, with 25% Maccabeau, 15% Marsanne and 10% Bourboulenc. This is a well-balanced wine with white fruit aromas, floral notes and a long, elegant finish. Ideal as an aperitif or with grilled fish.
