The winemaker

The history of Cave de Pazac


Cave de Pazac occupies a Provencal farmhouse dating back to the 16th century. It was once a coaching inn, then a hunting lodge. In 1968, following the clearing and drainage of the Pazac plateau, the Cave de Pazac became a winery for the seven winegrowers newly settled on the new land.

The Cave de Pazac was renovated in 2014, but has retained its original character, true to its rustic, Provençal Rhone feel.

The Cave de Pazac vineyard


The Cave de Pazac vineyards cover 280 hectares in the Costières de Nîmes and Côtes du Rhône appellations, as well as the Pays d'Oc and Pont du Gard PGIs (Protected Geographical Indications).

The 7 winegrowers who work it are spread across the communes of Meynes, Redessan, Bezouce and Lédenon. They work the ferrallitic, stony soils of the region, taking advantage of the pebbles and cobbles specific to the terroir, which extends from Costières de Nîmes to Châteauneuf du Pape.

Since the beginning of 2021, all Cave de Pazac's partner winegrowers have level 3 HVE (High Environmental Value) certification. It involves regulating phytosanitary inputs and favoring manual labor, in order to preserve the environment and biodiversity.

Cave de Pazac wines belong to the following appellations:
AOP Costières de Nîmes, in red, rosé and white ;
IGP Côteaux du Pont du Gard ;
AOP Côtes du Rhône;
IGP Vin de Pays d'Oc in red and white;
IGP Vin de Pays des Coteaux du Pont du Gard, red, rosé and white;
Vin de France, red, rosé and white.

AOC Costières de Nîmes

AOC Costières de Nîmes lies north of the Gardon valley, stretching 40 kilometers to the southwest and the Petite Camargue. Some fifteen kilometers wide, it is bounded by the Nîmes garrigues on one side and the Rhône plain on the other.

AOC Costières de Nîmes produces light white, red and rosé wines.

IGP Côteaux du Pont du Gard

The Côteaux du Pont du Gard PGI stretches from the Mediterranean coast to the Ardèche, covering 19 communes. It provides the link between Languedoc and Provence.

The grape varieties are highly diversified, hence the wide range of wines produced under this PGI: Grenache, Cinsault, Carignan, Sauvignon, Roussanne, Marsanne, Mourvèdre, Cabernet Sauvignon, Merlot and Chardonnay.

AOP Côtes du Rhône

The terroir of the Côtes du Rhône appellation stretches from Vienne, to the gateway to the Costières de Nîmes. The vines benefit from sandy soils that regulate water supply, as well as stony soil that stores the sun's heat during the day and releases it at night, thus avoiding excessive temperature variations.
