The winemaker

The history of Domaine Borie la Vitarele


Domaine Borie la Vitarele was founded in 1990 by Jean-François and Cathy Izarn, with 18 hectares of vines, in the Saint Chinian AOC. The couple set out to create a vineyard that respects the environment and biodiversity, intervening as little as possible in the vine-growing process.

In April 2014, following Jean-François' accidental death, his daughter, Cathy, joined her mother in managing Domaine Borie la Vitarele. Since 2017, Camille has been in charge of the vinification of the estate's production.

The Domaine Borie la Vitarele vineyard


The Domaine Borie la Vitarele vineyard covers 18 hectares, including 15 hectares of red and 3 hectares of white. The grape varieties are:

for the red wine, 50% Syrah, 40% Grenache Noir, 5% Carignan and 5% Mourvèdre;
for the white wine, 35% Vermentino, 35% Bourboulenc and 30% Clairette.

The average age of the vines is 30 years. Domaine Borie la Vitarele produces an average of 70,000 bottles a year.

Domaine Borie la Vitarele's vineyards are surrounded by nature, with no neighbors to influence the terroirs. The aim is to protect the environment to achieve the purest possible organic and biodynamic cultivation.

The terroir is divided into three parts:

Les Terres Blanches with clay-limestone soil, made up of Eocene limestone and lacustrine marl;
Les Schistes with Carboniferous shale and sandstone soils into which the roots of the vines grow;
Les Crès with soils of rolled pebbles, composed of ancient alluvium from the Orb River.

The wines of Domaine Borie la Vitarele


Le Grand Mayol

Le Grand Mayol is the white wine from Domaine Borie la Vitarele. This mineral wine is composed of 40% Clairette, 40% Vermentino and 20% Bourboulenc.

Its nose is filled with ripe white peaches and pears, almond, lemon and anise. Its palate is a complex blend of roundness and minerality, with a fresh finish offering a fine saline touch, enhanced by citrus notes.

Les Terres Blanches

Les Terres Blanches is a typically Mediterranean red wine, made from a blend of 50% Syrah, 40% Grenache and 10% Mourvèdre.

The nose is rich in red and black fruits, as well as sweet spices. Fruity on the palate, backed by an elegant, discreet tannic structure.

Les Schistes

Les Schistes is a spicy, silky red wine made from 60% Grenache and 40% Syrah.

Its nose is fragrant with garrigue, eucalyptus and cherry. The palate is dense and deep, carried by silky tannins. Its distinctive finish evokes hints of mint.
