The winemaker

Changing the way wine is made

Aubert and Mathieu, it's an atypical story. Anthony Aubert, after spending 6 years between Asia and New York working with wine importers, decided to settle in Carcassonne and start his own wine production business. His project quickly won over Jean Charles Mathieu, a young ESCP graduate who had spent 4 months working for a major group, eager to return to his native land.

Together, they set up in the middle of the Languedoc terroir to shake up the highly codified world of winegrowing in France. Their first leitmotif is, of course, their eco-responsible approach, which includes carbon neutrality, support for biodiversity, eco-designed packaging, carbon offsetting...

Aubert et Mathieu is also about democratization in the world of wine, particularly in terms of consumption, with the introduction of packaging and prices accessible to all. This spirit also makes for more authentic and transparent wines, in that they are fully explained to consumers.

Terroir

Aubert & Mathieu's vineyards cover some of the finest appellations in Languedoc Roussillon. These include AOC Terrasses du Larzac, Corbières, Minervois la Livinière and Côtes du Roussillon Villages Caramany.

Naturally, the different vineyard plots benefit from a diversity of climates, soils and grape varieties. This wealth of terroirs gives rise to wines with varied, original and gourmet profiles.

Wherever Aubert & Mathieu source from, they take care to ensure that the winemakers are dynamic, ambitious and respectful of the terroir on which they work. In this way, nature is respected and sustainable viticulture develops in the minds and vines of the region!

In the cellar, winemaking, blending and ageing techniques are not set in stone, but are adapted to each cuvée so that they can best express the terroir and reveal their full potential.

The wines

Aubert & Mathieu wines are the result of a very rigorous selection of grapes in cool, high-altitude terroirs.

The hand-picked grapes are vinified in a gentle way, with strict temperature control and controlled ageing. In this way, the cuvées produced are gourmet and authentic, and reveal the typicity of the soils.
