The history of Tsarine Champagne



It was in 1730 that the Chanoine brothers dug the first cellars in Epernay. Right in the heart of the Age of Enlightenment, they obtained the indispensable royal authorization to market champagne not in barrels, but in bottles. The two brothers wasted no time in setting off on the road to all the courts of Europe to take advantage of the brand-new champagne craze.

In 1741, the daughter of Peter the Great and Catherine I, Elisabeth Petrovna, acceded to the Russian throne, and it was to this tsarina that the Chanoine brothers decided to honor by naming their house Champagne Tsarine.

The making of Champagne Tsarine: preserved ancestral know-how for an exceptional beverage



The harvest, which takes place from late August to early October, is carried out exclusively by hand to preserve the quality of Champagne Tsarine's three grape varieties: Pinot Noir, Chardonnay and Meunier.

As soon as they arrive at the press, and after pressing and settling, the grape juice ferments in vats, at a constant temperature of 18°C. It takes a fortnight for the sugars in the must to transform into alcohol and carbon dioxide. It is at the end of fermentation that the aromatic notes specific to Tsarine Champagne are created. The wine becomes fruity, with brioche and butter flavors.

Blending shapes the signature of a champagne house. For Champagne Tsarine, it's made up of 75% wines of the year and 25% reserve wines (wine from previous years). The cellar master decides on the proportions between Pinot Noir, Chardonnay and Meunier. During bottling, sugar and yeast are added to prepare the wine for sparkling.

The bottles are then stored, generally for 18 months for Cuvée Tsarine Premium Brut, to mature and offer you the best sensations of Tsarine Champagne. Vintage wines wait up to 48 months, before being offered for sale. Disgorging, which consists in expelling the deposit accumulated in the neck of the bottle, is still required. After the addition of liqueur, which determines the semi-dry, brut or extra brut, the bottle is corked and labeled. Tsarine Champagne is ready to be enjoyed!
