The history of the winery
The history of this Champagne winegrowing family began in 1900, when Hermas Saturnin Devaux planted a few ares of vines in the village of Colombé-le-Sec. One of his sons, Alexandre, continued the work begun by his father. He also took part in other farming and livestock activities, as wine production did not generate enough income for him at the time. But his passion for vineyard work led him to become one of the founders of the Colombé le sec cooperative.
In 1946, he planted his first rows of vines at a place called "les fleuriottes" on a micro-terroir characterized by Kimmeridgian subsoil. Today, these Chardonnays are the oldest vines on the estate, producing grapes of exceptional quality. After the sudden death of his wife, he raised his daughters alone. One of them, Françoise, helped her father on the estate from the age of 13. She married Didier Soret and together they continued to develop the estate, planting vines on other plots.
In the 1980s, the couple produced their first Devaux Soret Champagne cuvées and began marketing a few thousand bottles in the early years. Today, the estate is run by their sons, Loïc and Romaric. Passionate about their parents' work, they both studied viticulture, one in Beaune and the other in Avize. Today, the two brothers work as a team, complementing each other perfectly; Loïc is in charge of wine development and production, while Romaric manages the vineyard and vineyard care. Independent winemakers, they improve the estate's viticultural facilities and install a traditional wooden wine press.
The estate
The eight-hectare estate is located in the Aube department in the village of Colombé-le-sec. It extends over the valleys and plateaus of the Côte des Bar. This prestigious Champagne terroir is ideal for producing exceptional cuvées. The vineyard is planted with three grape varieties: Pinot Noir, Pinot Meunier and Chardonnay. They are committed to preserving their land and this exceptional environment. The estate is run using agriculture raisonnée in an environmentally-friendly approach, and they have obtained HVE certification.
Attached to tradition, but attentive to producing the best possible cuvées, the Soret Devaux brothers combine the knowledge and know-how acquired through their family heritage with the most advanced modern techniques. Quality is the order of the day, and the estate's cuvées have won several distinctions, rewarding the efforts and know-how of the producers.
The champagnes
Brut Millésime Récolte 2014 is a balanced cuvée offering lovely acidity and elegant sweetness. Made with 50% Chardonnay and 50% Pinot Noir, this is a champagne with fine, elegant bubbles and an intense color. The aromatic bouquet is dense and complex, with notes of gingerbread, brioche and candied fruit. The palate is sunny and balanced, with exceptional fruitiness. This is an ideal champagne to serve during a apéritif dinatoire or an evening with friends.
Brut tradition is a champagne made from a blend of the estate's three grape varieties, with 70% Pinot Noir, 20% Chardonnay and 10% Pinot Meunier. Vinified in the estate's traditional press, with one-third reserve wine, the cuvées are then aged in our cellars for 3 to 4 years. The wine has a brilliant, light gold color. The nose offers notes of yellow fruit, and the palate is fresh and fruity, with flavors of peach, pear and hints of white pepper. It has received several awards, such as a star in the guide Hachette 2020, a medal at the 2021 Gilbert et Gaillard international challenge and a silver medal at the 2018 Concours Général Agricole. This is a delicate champagne, perfect to accompany an aperitif or a festive moment.
Brut Réserve is a cuvée vinified with a quarter of reserve wine, then aged for five years in the cellar. It's an easy-to-match champagne, equally at home with meat in sauce, a cheese platter or a dinner aperitif. It is a blend of 30% Chardonnay and 70% Pinot Noir. The nose is spicy, with aromas of fruit spirits, fresh nuts and toast. Like other Soret Devaux cuvées, it has received several awards, including a silver medal at the Bettane & Desseauve 2020 competition and a mention in the Hachette wine guide in 2020.
