The winemaker

The history of Champagne Lallier

We owe the viticulture of the Aÿ region to the Romans, some 1,700 years ago. The tradition continued after their departure, and it was in 1906 that the Lallier Champagne house was born. It was founded by René Lallier, husband of an heiress from a great Champagne family.

René set up his business in the heart of the village of Aÿ, labelling his production with the family coat of arms. In 1936, Aÿ was classified as one of Champagne's seventeen "Grand Cru" villages. This award encouraged the Lallier Champagne house to continue its expansion.

In 1996, René-James Lallier, René's grandson, began renovating the estate. He carried out major works to modernize the production tools and give a facelift to the cellars where the bottles of Champagne Lallier are aged. Since 2004, Champagne Lallier has been owned by Francis Tribaut.

Lallier vineyards and expertise

Champagne Lallier's vineyards cover just over 15 hectares, the majority of which are located on the Aÿ estate, in Grands Crus. Viticulture is carried out with the greatest respect for the environment, without the use of insecticides. Champagne Lallier has deliberately chosen quality over quantity. Annual production is 400,000 bottles.

The grape varieties used are Pinot Noir and Chardonnay. Since 2007, alcoholic fermentations have been carried out using an in-house sourdough, cultivated and developed from yeasts naturally present on Chardonnays from the Grand Cru Loridon in Aÿ. When blending, reserve wines incorporated do not exceed 20%. They provide the binder for a tasty, creamy, intense champagne.

The wines of Champagne Lallier

Champagne Lallier Brut Nature

Champagne Lallier Brut Nature is a fresh, subtle wine. It is a blend of 62% Pinot Noir and 38% Chardonnay. Its sparkling golden color is elegant. The nose blends delicate flavors of citrus and white flowers. More mellow honey notes can also be detected. The palate is clean and the effervescence creamy.

Champagne Lallier Brut Nature goes particularly well with savory dishes, rather than sweet ones. For example, it goes wonderfully well with savory aperitifs, white meat dishes and mushroom sauces.

Champagne Lallier Blanc de Noir Grand Cru

Blanc de Noir Grand Cru from Champagne Lallier is made from 100% Pinot Noir grapes. It boasts magnificent aromatic complexity and generous flavors, backed by an elegant structure. This wine is perfect as an aperitif with a platter of fine charcuterie. Then pair it with a starter of oeuf en meurette, followed by grilled prime rib. Finish with a dessert of vanilla and crème de cassis.
