The winemaker
The Devaux Champagne House, a family history
It all happens in the heart of a family that shares a real passion. It all began in the 19th century with the Devaux brothers, Jules and Auguste. Then come these three famous women of character. The first of them, a widow, Madame Claude-Josephte Devaux, founded in 1846 the "Maison Vve A. Devaux" in Épernay. Devaux" in Épernay.
Her son, François-Auguste, helped her to run it. The latter married Augusta-Maria, a woman from Champagne, who was the second woman to manage the business after her husband's death until 1845.
The third woman took over in 1907, following the death of her husband, Charles-Auguste Devaux. Her two sons eventually took over in the 1950s. Jean-Paul Auguste Devaux was the last of the name and without an heir. In 1987, he entrusted the brand to the Union Auboise wine group.
The Vineyard
The vineyards of the Côte des Bar guarantee a quarter of the Champagne production. The vines cover an area of nearly 600 hectares. The grape variety is composed of white Chardonnay (10%) and Pinot Noir (90%: king grape variety).
Its exceptional setting brings together underground soil and exclusive exposure conditions for the production of Pinot Noir. The latter is predominant in the Montagne de Reims and the Côte des Bar. At Devaux, they are used to saying that "the Pinot Noir of the Côte des Bar is the backbone of our champagnes". The vineyard is managed by the practice of integrated viticulture (the Démarche Qualité Vignoble charter).
The quality and expertise of Devaux Champagnes
The Vignoble Quality Approach imposes the reinforcement of certain rules for each of the Devaux champagnes in order to obtain optimal quality. Such as:
Plot selection
The condition of the vineyard according to the principles of sustainable viticulture
Technical monitoring, step by step, of the vineyard campaign
Pressing as close as possible to the terroirs where the grapes are harvested
These requirements continue in the winery and cellar, where the production process meets certain standards. "The exceptional maturation time is a marker of the DEVAUX style. It allows aromatic complexity to be combined with great finesse. "
The Maison Devaux is known, but above all recognised, for its know-how and meticulousness in its work, for a sustainable culture. The latter offers a wide range of classic champagnes, which has been completed with rare bottles of the "sublime cuvée Sténopé"; created thanks to the collaboration of the Maison Devaux with Michel Chapoutier.
