The winemaker

The Champagne Cattier vineyard

Champagne Cattier's vineyards have been farmed sustainably and eco-responsibly for over 20 years. This land of Premiers and Grands Crus stretches around Chigny-les-Roses and covers Ludes and Rilly-la-Montagne, in the heart of the Montagne de Reims.

The Cattier Champagne estate holds Ampelos certification, a standard established by winemakers committed to working the vines while respecting the flora and fauna. It also holds Haute Valeur Environnementale (HVE) level 3 certification (the maximum), as well as Viticulture Durable de Champagne (VdC).

Le Clos du Moulin

Clos are rare enough in Champagne to be worth mentioning. Clos du Moulin was acquired by Jean Cattier in 1950. At the time, it was a 2.20-hectare wasteland that had to be rehabilitated. From its first harvest, Clos du Moulin was the subject of a cuvée named "Clos du Moulin", the first bottles of which were marketed in 1955.

Clos du Moulin remains the emblematic plot of Champagne Cattier. Three vintages are blended to produce a cuvée that waits 8 years in the cellar before being marketed.

Cattier Champagnes

Clos du Moulin Premier Cru

Clos du Moulin Premier Cru is produced in a limited edition of numbered bottles. The champagne is a fair blend of Pinot Noir and Chardonnay. It ages for over 8 years in the cellar before being released on the market.

Champagne Cattier's Clos du Moulin Premier Cru has a golden color, enhanced by deep amber highlights. Its effervescence shows through with a fine cordon of bubbles.

The nose is expressive, with dominant notes of mirabelle plum and white-fleshed fruits such as pear and apple. Flavors of raspberry, strawberry and lemon enrich the aroma. There are also hints of almond and praline. The palate is fresh, with mirabelle plum, melon and peach. The long finish evokes citrus fruit.

Clos du Moulin Brut Premier Cru is an exceptional champagne to accompany any meal. It goes wonderfully well with cep risotto or duck à l'orange. It's perfect for sublimating your cheese platter, notably with a Comté aged at least 12 months.

Clos du Moulin Rosé Premier Cru

Cattier Clos du Moulin Rosé Premier Cru Champagne is rich and fresh. Its blend is composed of 60% Pinot Noir and 40% Chardonnay. It must also age for at least 8 years in the cellar before being marketed.

Clos du Moulin Rosé Premier Cru's color is luminous and subtly tiled. Its effervescence is composed of very fine, regular bubbles. The nose is rich in fruit, notably raspberries. It is also filled with sweeter notes of licorice and candied orange. The finish evokes peppery nuances.

The palate is fresh and dynamic. Once the red fruit aromas have faded, bitter orange takes over, before fading to a long, spicy finish. Champagne Cattier rosé is ideal as an aperitif. It also goes well with refined dishes, such as duck à l'orange or sushi.
