The son of a cattle breeder, frédéric cossard started out as a winemaker in 1996 with plots in saint-romain and auxey-duresses, founding the domaine de chassorney. Over time, the domaine expanded into other communes (pommard, volnay, hautes-côtes-de-beaune) and today covers 10 hectares. the vines are treated with plant potions, the rows are ploughed with a horse, and nothing is added in the cellar. This meticulous work has been recognized as far afield as Japan, where Domaine Chassorney is a legend in the world of Japanese natural wines. Very attached to Georgia and its wines, Frédéric now owns 10 qvevris imported from Georgia, in which he ages some of his own wines. He is also working on ageing in porcelain eggs. All in a bid to minimize the use of barrels for his wines. 10 years after beginning his adventure as a winemaker, frédéric cossard and his wife laure have launched a trading company under his own name, under which he vinifies organically grown grapes from the great appellations of burgundy, but also from jura, beaujolais and languedoc. in any case, whatever he vinifies, it makes great wine!
