Founded in 1840, Maison Simonnet-Febvre owns vineyards in Chablis, Chablis Premier Cru Mont de Milieu and Chablis Grand Cru Preuses. This traditional Chablis vineyard is one of the oldest in the region. The winemaker

The history of the estate


Simonnet-Febvre was founded in 1840 by Jean Febvre. A traditional Chablis estate, Jean Febvre began by vinifying Chablis Mousseux, the forerunner of the future AOC Crémant de Bourgogne. Today, the estate remains the only one in Chablis to continue making Chablis Mousseux using the traditional method.

At the end of the 19th century, the estate expanded and modernized, including the modernization of equipment and the creation of warehouses and loading bays. In 2003, the estate was taken over by Maison Louis Latour, who gave it a new lease of life, while retaining its independence.

Today, the estate covers 15 hectares of vines in the Auxois region, between Chablis and Beaune.

The terroir


The terroir on which Maison Simonnet-Febvre is spread is quite diverse, reflecting the four vineyards that make it up: the Chablis vineyards, the Crémant de Bourgogne vineyards, the Grand Auxerrois vineyards and the Coteaux de l'Auxois vineyards.

The Chablis vineyards are planted exclusively with Chardonnay, on limestone soils from the Upper Jurassic era. There is a very important Kimmeridgian layer, very rich in marine fossils.

The Crémant de Bourgogne vineyards are planted with Chardonnay and Pinot Noir grapes. Once harvested, the grapes are vinified using the traditional method.

The Grand Auxerrois vineyard is planted with Chardonnay, Pinot Noir and Bourgogne Aligoté on limestone terraces.

The vineyards of the Auxois hillsides are planted with Chardonnay, Pinot-Gris, Auxerrois and Pinot Noir.

The wines


Cuvée Bourgogne Epineuil is a fairly light wine. The aromas are very fruity and the palate is balanced. The sweetness of this wine makes it a good match for fine charcuterie or grilled meats. It can also be paired with red meats or meats in light sauces that are not too spicy.

Cuvée Bourgogne Chitry boasts an intense golden color with green highlights. Its nose features aromas of honeysuckle, citrus and gunflint. The palate is lively and well-balanced, with a hint of acidity. Perfect with terrine, shellfish, river fish or Burgundy snails.

Cuvée Irancy offers a crimson color and a very expressive nose of red and candied fruits. The tannins are mellow, the palate is harmonious and the whole is well-structured for ageing. Ideal with charcuterie, red meats or small game.
