Hand-picked and sorted, the grapes are vinified whole or destemmed, depending on the vintage, in open oak vats. Vinification is traditional, with daily punching down and pumping over, and long vatting periods of fifteen days or more. The wines are then aged in oak barrels for a year, then bottled with the minimum of intervention, usually without fining or filtration.
