"terroir: this parcel, surrounded by forest, is part of the côte de nuit vineyard. Its steep slope and eastern exposure enable the production of superb wines. in the cellar: to protect the grapes as much as possible, they are picked and sorted by hand. Maceration and vinification last between 2 and 3 weeks, with the use of "indigenous" yeasts, i.e. yeasts of natural origin. The wines are aged for ... 14 to 18 months, developing their aromas in French oak barrels. Tasting by Madame Boss-Drouhin: "The color is a deep red. The aromas are powerful and noble, with notes of cherry and blackberry, and woody cedar tones evolving towards game. On the palate, a fine balance between structure and velvety texture. The highly aromatic finish is reminiscent of fruit syrups and sweet spices". Read more
