In a few words ...
Hand-harvested with the greatest care, the grapes are brought to the Hospices cuverie, de-stemmed and then put into vats by gravity. Vinification is traditional, under the guidance of Jean-Marc Moron, cellar master at Hospices de Nuits. The wine is then placed in new barrels and aged in the Hospices cellar until it is taken over by Maison Edouard Delaunay in March. Total ageing is approximately 15 months.
