Vineyard work Our approach to viticulture on our estates serves as a benchmark for our winemaking partners. Their vineyards are monitored by our teams with the same rigor as ours. This long-term partnership enables us to set precise objectives with the winemakers, particularly in terms of health, yields and grape maturity at harvest time. Vinification Hand-picked into 25-kilo crates, the grapes are transported to the winery as quickly as possible to preserve the integrity of this delicate fruit. The grapes then pass over a vibrating sorting table to remove any damaged berries or bunches. The harvest is destemmed to avoid excessive bitterness due to the tannins in the stalks. Fermentative maceration then lasts 15 to 20 days in our temperature-controlled conical oak vats. This enables us to control fermentation temperatures, which have a direct influence on the extraction of aromas and color. Finally, a gentle, selective pressing enhances the wine's nobility and elegance. Ageing Aging in barrels brings aromas and, thanks to the porosity of the wood, oxygenation, allowing the wine to mature properly. maturation of the wine. This wine was aged for 14 to 16 months in our cellars in oak barrels (15 to 20% new barrels). The varied origins of the barrels (Tronçais forest, Allier, Vosges), their specific toasting and their age all contribute to our quest for aromatic complexity in the revelation of this great terroir.
