The Côte Chalonnaise follows on from the Côte de Beaune, to the south of Santenay. There are five village appellations in the Côte Chalonnaise, and Mercurey, to the north, is the best-known. Mercurey is vinified in stainless steel vats for around 3 weeks. It is then aged in oak barrels for around 12 months before bottling.

Its bouquet develops aromas of red fruits (cherry, Morello cherry) and spices.
