Cuvée: mercurey "clos rochette" monopole terroir: clay-limestone, compact soils grape varieties: chardonnay vinification: grapes are cut and sorted by hand. The must is extracted using a pneumatic press, then settled. Alcoholic fermentation takes place over 4 weeks, 55% in French oak barrels, 25% of which are new. Aging: Aged in barrel for 16 months with regular stirring of the lees, the other part of the cuvée in vats. Tasting notes: golden-yellow in color with brilliant highlights, the nose is subtle, with a lovely aromatic complexity on the freshness and aromas of white flowers and lightly toasted spices, the palate is fine and elegant, balanced with roundness and fatness on a finish of great delicacy.
