In a few words ...
The grapes are hand-picked, sorted and completely destemmed. Vatting lasts a fortnight at a controlled temperature. Regular punching of the cap and watering are carried out during the active phase of alcoholic fermentation. Malolactic fermentation is carried out in the traditional way, in new oak barrels of one or more wines. Aging lasts 16 months.
