The grapes are harvested in small, perforated crates, then carefully sorted on a table. The grapes are then 100% de-stemmed, but not crushed (i.e. whole), and gravity-fed into vats. Maceration lasts around three weeks, with more or less frequent punching of the cap. The wine is aged for 16 to 18 months in barrel, with a relatively low proportion of new barrels (< 20%). Finally, the wine is lightly filtered before bottling.
