The winemaker

The history of the estate


Fanny Sabre has been at the head of her estate since 2005, when she was 25 years old. In her early days, she was helped by renowned winemaker Philippe Pacalet, who taught her how to deal with the links between vine and land in order to best reveal the terroirs in the wines.

Today, the estate covers 4.5 hectares of vineyards divided into numerous parcels spread over the prestigious appellations of Beaune, Savigny-Lès-Beaune, Meursault, Volnay and Pommard.

Precise vinifications for precise vintages


Concerned with producing authentic wines that are true to their terroir, Fanny Sabre produces rigorous work in the vineyard. Ploughing, grassing, yield control, organic treatments and green harvesting... so many methods put in place to preserve the identity of the terroir.

In the cellar, the vinifications are parcel by parcel, with fermentations on indigenous yeasts, a minimal dose of sulfur so that the wines keep their authenticity but without any deviance.

Then, the red wines follow a semi-carbonic maceration while the white wines are pressed before entonnage on lees.

The wines


The Anatole cuvée is a Pinot Noir that can be drunk young. Fresh and fruity, it remains one of those natural wines that surprises with the complexity of the flavors and aromas, very typical of the terroir, that stand out on the nose as well as the palate. Perfect to enjoy with cooked meat, whether white or red.

The Pernand Vergelesses vintage adopts a rather mineral and taut profile. A biodynamic wine, it breathes terroir and surprises your taste buds. Ideal for accompanying seafood, you can just as easily enjoy it with charcuterie, white meat or cheeses.
