The winemaker
In 1968, Paul Pillot took over the estate from his father Henri. A few decades later, he was joined by his children, Thierry in 1999 and Chrystelle in 2003, who are now involved in the estate's future with motivation and new energy.
The estate covers 13 hectares of vines, mainly in the communes of Chassagne-Montrachet, Saint Aubin and Santenay. We vinify 70% white and 30% red wines.
We try to respect each of our terroirs to produce the most authentic wines possible. This means rigorous, herbicide-free viticulture, tillage and yield control. Vinification is carried out in the traditional way, with a minimum of intervention, and maturing for 12 to 18 months in oak barrels (20 to 30% of which are new).
