Thomas Pico, owner and manager of the family estate of Bois d'Yver, created the Pattes Loup estate in 2004 in Courgis in northern Burgundy, on the highest vineyard of Chablis. Son and grandson of winegrowers, he studied oenology and viticulture and today he makes great, singular and balanced white wines in the Chablis appellation, using the most natural methods possible. The Winery


The estate was created with eight hectares of vines, then expanded over time. The vineyard covers 22 hectares today and it covers four first growths on the left bank of the Serein.

Thomas Pico converted the estate to organic farming as soon as he acquired it and he obtained certification in 2009. The first Pattes Loup vintages were vinified in 2006 and a new winery was built in 2014.

Committed to producing wines that perfectly express this magnificent terroir, he works his parcels entirely and deliberately limits yields. In the cellar as in the vineyards, he chooses natural methods, values traditional know-how and limits interventions. He uses indigenous yeasts for the vinification and he carries out long maturations sometimes up to 30 months.

The wines


Vent d'Ange vintage 2018 is a chablis with a round, fresh mouthfeel. It is made from grapes from three parcels with clay-limestone soils: les Malantes, la Ménarde and the place called Pattes Loup. The wine is aged for two and a half years. The nose offers aromas of grapefruit and apricot with mineral nuances and a beautiful saline finish. It is a sunny wine, with a fleshy substance, which benefits from a few years in the cellar. It goes wonderfully with scallops or a cheese puff pastry.

Domaine Pattes Loup Premier Cru Butteaux is a 100% Chardonnay natural Chablis wine. It benefits from a long aging on lees, first in vats and then in tuns and barrels. The wine is bottled without refining or filtering. It offers a bright aromatic bouquet of apricot, candied lemon and honey. It is a complex wine with a round, satiny mouthfeel, perfect with seafood, scallops or langoustines.

The Domaine Pattes Loup Premier Cru Beauregard 2017 is a cuvée from 30-year-old vines. It is aged in old barrels for 24 months. It is an attractive wine with red currant aromas and a lingering mineral finish.

Domaine Pattes Loup Premier Cru Côte de Jouan is more slender with a fleshy, fresh and lively palate. It comes from little-known parcels of the estate, the lieu-dit "Les Landes et Verjus". It is a luminous wine, of great purity. It offers notes of exotic fruits and flowers.
