The winemaker

After a cycle of attentive care, it's every year that we have to challenge ourselves to bring the new vintage to fruition. The Domaine uses cold pre-fermentation maceration, so fermentation is slow. The cap is punched down at the start of fermentation. All cuvees are tasted daily. After pressing, the harvest is placed in barrels, one-third of which are renewed each year and divided according to appellations. Our barrels come from different regions (Nièvre, Vosges and Allier), and it's the blending of each of their particularities that creates the unity of the cuvée. After 12 to 15 months' ageing, the appellations are blended in vats to mellow the tannins. Bottling takes place at the Domaine. Singular in its single-varietal use of Pinot Noir and Chardonnay, and plural in the myriad expressions we winemakers seek to express. From the outset, the Domaine has practiced its own selection of vines (sélection massale). Today, a rigorous choice is still made. The Domaine now covers 16 hectares, spread over the Côte de Beaune and Côte de Nuits, and offers some twenty appellations, from regional to village and 1er cru, as well as a few grands crus. By controlling yields, ploughing frequently and not using chemical fertilizers, we respect our terroirs and their characteristics. Convinced of the right balance between our work and nature, and respectful of our terroirs, the Domaine uses integrated pest management.
