The winemaker
Julien Besse presents his estate and his vision of vineyards and wine:
THE VINEYARD
When I set up my business, I wanted to implement a different approach different approach to the vineyard, with respect for the terroirs and their environment. To preserve as much as possible the soil and the ecosystem that surrounds it. My approach made people smile at the time, but I don't regret my choices. Today, I manage my permanent grassing by limiting overly deep ploughing I only use fertilisers and fertilisers that are not harmful to the environment. I only use green manure. THE CELLAR
I am always keen to make wines that are like me. I want to make wines with as little intervention as possible and gradually arrive at zero sulphite vintages. There is still a long way to go but we are working on it with my oenologist. My red, white and rosé wines are generous, fruity and long on the palate. For the past 2 years, in order to expand my range, I have been making my own Crémants of Burgundy. From the grapes to the disgorging, including the from the grape to the disgorging, including the taking of the foam, my taste for the challenge does not dry up since I manage its I manage the whole process. This non-dosed Crémant, extra brut, is there to delight the finest palate and accompanies you in moments of sharing and conviviality. and conviviality.
