The winemaker
A family estate inherited from our mother's side, taken over in 1978, it covers 6 hectares in the communes of Puligny, Meursault, Volnay and Pommard. In order to respect our terroirs, the estate is run using the "lutte raisonnée" method, with no weedkillers and only ploughing to preserve our soils. All our wines are vinified in the traditional way.
For white wines. Alcoholic fermentation takes place in vats, and when the density is around 1010, the must is transferred to our barrels (15 to 20% new wood). Aged for an average of 12 to 14 months, they remain on the lees during this period. Once ageing is complete, all the barrels are racked for blending. A month later, they are fined and remain on the lees for a further month. Bottling can then begin.
For Red Wines. The grapes are directly sorted on tables in the vineyard, then taken to the winery where they are 100% destemmed. Vinification takes place in vats, with cold maceration for 3/4 days, followed by natural fermentation. Vatting periods vary from 15 to 18 days, and all vats are monitored morning and evening (density and temperature) and pigmented twice a day. At the end of fermentation, the free-run juice and the press juice are blended, then transferred to our barrels (25 to 40% new wood). A first racking takes place after malolactic fermentation.
