The winemaker

History


A family estate for 7 generations, Domaine Gautheron is now under the management of Cyril Gautheron.

Located in Fleys, a small winegrowing village 4 kilometers from Chablis, Domaine Gautheron operates 28 hectares of vines on the exceptional Kimmeridgian terroir. It is on this unique terroir that the wines of Chablis can draw their typicity.

When Cyril took the reins of the estate in 2001, the vines covered 18 hectares. Upon his arrival, he also undertook the creation of a new winery.

The estate now has 28 hectares of vines and produces AOC Burgundy, Petit-Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru. Each year, an average of 220,000 bottles leave the estate's cellars.

More than a family history, it is the story of an ambition for quality and respect for the environment.

Expression and respect for the terroir are at the forefront of the Gautheron estate's philosophy. Indeed, it is through respect for the vines and nature that the wines can reveal the full potential of their terroir.

The vineyard is conducted according to a strong environmental reflection and obtained in 2020 the High Environmental Value level 3 certification.

The vineyard limits the use of phytosanitary products as much as possible, eliminating weed killers, natural and preventive treatments of the vines, limiting yields,... Everything is put in place to ensure a natural and monitored process to bring out the best in Chablis.

The wines of Domaine Gautheron


Domaine Gautheron's Chablis wines combine freshness, minerality, complexity, elegance, finesse : a true demonstration of know-how!

Perfect for accompanying aperitifs to gourmet meals, the estate's Chablis are true chameleons for food and wine pairings.

The wines produced by the estate are made exclusively from Chardonnay, which can flourish serenely on the limestone soils of the Kimmeridgian terroir. This remarkable terroir gives the estate's wines a particularly fresh and mineral character.

The vinification is done in stainless steel tanks, which allows the wine to retain the purity of the fruit and capture its mineral and fresh side, so revealing of the Chablis terroir.

The vineyard produces 7 Premiers Crus and 4 Grands Crus, among others.

The wines of Domaine Gautheron develop aromas of citrus and white flowers. In the mouth, they are fruity, straight, long and mineral. The delicacy is there!

The Grands Crus develop more vanilla and butter scents, as well as dried fruit flavors. On the palate, we distinguish structure, richness, minerality and length.
