The winemaker
It was abandoned in 1869 following the invasion of phylloxera, taken by me in 1984, cleared and replanted in 1985 (first vineyard planted in Burgundy machine) with four different clones our field with an area of 8 HA50 produces white wines made with Chardonnay. Appellations: Macon Villages, Macon Aze, Burgundy Chardonnay Crémant de Bourgogne 300 m altitude, facing south, southwest, the vine flourished on clay and limestone ground, consisting of flint, aggloméras of limestone sediments, with a depth of 20 to 50 cm from the ground, mixed with countless stones which restore the night heat buildup stored day, contribute to outstanding maturity of chardonnay. Trellised modernly son with stainless steel and plastic stakes, mechanical harvesting can be accomplished without risk of iron haze in wines (the old iron son argues iron doses in wine during the shaking of the harvest). The plastic pegs are relatively flexible, they dampen vibrations of the machine that is distributed in the row on a good length, which has the effect after a rain drop water trapped inside the clusters. The ideal of course is to harvest good weather! The Size: The vines are pruned in single Guyot arched wand. Tillage: shallow plowing are to straddle tractor with vines inters and claws. More mowing with adequate tools (cloverleaf mowers), which do not injure the vine. Treatments: A visual monitoring of the vines is done regularly, if necessary treatments are implemented; they are made with small dose Bordeaux porridge in order not to exceed 4 kg of copper metal per year per hectare to fight against mildew and sulfur against powdery mildew. The harvest: All vines are followed in order to know the level of maturity that determines the harvest date. We have our own harvesting machine equipped with a ginner that sorts the harvest, allowing us to pick up in good conditions during the cooler hours (at night), with a maximum maturity.
