The winemaker

Daniel-Etienne Defaix comes from one of the oldest families of Chablis and Chablis has the heart of 28 hectares of historic vineyards: vineyards selected by the Cistercian monks Monks Pontigny in the XIIth century (Léchet Coast), the vineyard kings of France (Lilies) and the vineyard of the Lords of walnut trees (Vaillon, Charlevaux and Champlain). His ancestors Castle Faix cultivated vines to 16th and 17th century. Paul Etienne Du Jer De La Croix De Faix resumed in the 18th century this winemaker tradition on Chablis. Daniel-Etienne Defaix today perpetuates this secular winemaker family tradition of these great monastic names. estate wines' reputation is closely linked to their ability to become great wines for aging and pleasures.
