Facing south, overlooking the valley of the Yonne, leaning against the plateau of Othe, the vineyards of the Côte Saint-Jacques has always produced the best wines of Canton. His land, flint clay rests on a basement Turonian. The vineyards of the Côte Saint-Jacques is the northernmost of Burgundy, the first coming from Paris. Between Auxerre and Sens, the Côte Saint-Jacques in Joigny dominates. Facing south-southeast, overlooking the Yonne Valley, the vineyards of the Côte Saint-Jacques are backed at plate Othe (forest of about 1000 hectares). Field is essentially composed of clay to a predominant portion of flint on a basement Turonien (soft chalk), unique in the wine-producing region, which undoubtedly offers typical wines with a taste close appearance of flint, especially for gray wines from Pinot Gris. Winemakers from father to son, the VIGNOT family cultivates 12 hectares of vines, 10 ha in Burgundy appellation CÔTE SAINT-JACQUES. Over generations, the family VIGNOT gained notoriety thanks to his perseverance and rigor.
