Emmanuel giboulot - la combe d'eve 2017côte de beaunece lieu-dit is located on the montagne de beaune, in the hollow of a small combe that is very hot in summer. This 30-year-old vineyard looks towards the city of Beaune and faces the rising sun. The plot lies above the AOC Beaune 1er Cru "Les Bressandes". The soil is composed of very white clay-limestone and nodules containing barium inclusions. Vinification: the whole grape is pressed and cold-settled for around 24 hours. The clear must is fermented in multi-wine oak barrels to preserve purity and minerality. The resulting wine is aged on lees for 12 months before bottling. Established in Beaune since 1985, emmanuel giboulot is a pioneer of organic farming, which he adopted from the outset, and of biodynamic viticulture (certified in 1996), which he defends with conviction. His vineyards also include plots in the Hautes-Côtes and Saint-Romain.
