"la cuvée 2014: a subtle harmonieterroir: clos saint-denis is located in the small village of morey, where it is the smallest grand cru vineyard.au chai: to protect the grapes as much as possible, they are picked and sorted by hand. Maceration and vinification last between 2 and 3 weeks, with the use of "indigenous" yeasts, i.e. yeasts of natural origin. The wines are aged for 14 to 18 months, developing their aromas in French oak barrels. Tasting by Madame Boss-Drouhin: "The color is deep, the nose evokes bigarreau cherries finely spiced with a touch of Havana and island wood; the evolution of age generally brings animal or truffle-like aromas. A Clos Saint-Denis should be drunk at full maturity within 5 to 10 years, depending on the vintage, so as to benefit from perfect harmony between freshness, fatness and tannin. The persistence of the aromas on the palate (candied fruit) is of the utmost importance".
