Since the death of stéphane moreau at the end of august 2016, his wife virginie has taken over the domaine and is committed to continuing the direction taken to date. With meticulous work in the vineyard, long ageing and light filtration, the estate's Chablis wines are asserting their character, with depth and salinity. The domaine has now settled on long ageing processes that neither weigh down n... or aromatize the local Chardonnay, harvested here just ripe. Tasty Chablis, never demonstrative but perfectly digestible, that age very well. Domaine Moreau Naudet's Chablis Premier Cru Montée de Tonnerre comes from two small parcels of 30-year-old vines in the Vaux-Miolot and Butteaux districts. While the subsoil is essentially composed of marly limestone rich in oyster shells, the vaux-miolot plot (around half a hectare) has the particularity of resting on deeper, clayey soils, which are difficult to work, but which will give the wine extra fleshiness and textural density.
