Discovery of the Chablis Premier Cru appellation
The Chablis Premier Cru appellation is produced on both banks of the Serein, in the communes of Beines, Chablis, Chichée, Courgis, La Chapelle-Vaupelteigne, Fyé, Fleys, Fontenay-près-Chablis, Maligny, Milly and Poinchy. The AOC has 40 climats classified as Premier Cru, which can therefore be listed on the bottle label.
Of the 778 hectares, only chardonnay is planted, and thrives in a continental climate, albeit one that is very exposed to spring frosts. The soils of Chablis Premier Cru are calcareous, sometimes clay, and there are also marls.
Tasting the white wines of Chablis Premier Cru
Chablis Premier Cru reveals a golden coat, quite pale and crossed with green reflections, the famous green-gold that is often found for wines made from Chardonnay. The nose is very mineral, marked by iodine and lemon notes. We also detect Granny apple, planty touches with blackcurrant leaf, mint and lime blossom, and dry fruit notably with almond. The notes of undergrowth are frequent. In the mouth, the wine is dry, lively, light. The roundness and harmony are very pleasant, enriched by a nice length and mineral persistence.
Chablis Premier Cru are gourmet wines, to be accompanied by fine food. They make superb pairings with seafood, including oysters and scallops, frog legs, river fish, or savoury poultry such as poularde. With cheeses, we rather choose a Bleu de Bresse, or a Crottin de Chavignol, to accompany the Chablis Premier Cru.
