Domaine pierre boisson (boisson vadot) - hautes côtes de beaune 2018boisson-vadot / anne & pierre boisson is a group of burgundy estates based in meursault, burgundy. The wines are made in collaboration in the cellar of the boisson family, leaders among meursault winemakers for over two centuries. The 10-hectare estate was run by bernard boisson-vadot until 2016, and his son and daughter, pierre and anne boisson, have taken over since the 2017 vintage. Some of the wines are bottled under the boisson-vadot label, while certain plots on the estate are attributed to pierre boisson and anne boisson, and the wines are named after them.pierre boisson's 2018 hautes-côtes de beaune is made entirely from pinot noir grapes of average age;average age is 25 years, from two parcels ; « sous la velle » à baubigny and « les chaignots » à orches. The grapes are cold-macerated for 5 days, followed by alcoholic fermentation in stainless-steel vats with pumping-over and punching of the cap. After pressing, the wine is racked for 10 days. Malolactic fermentation takes place in barrels, and ageing lasts 18 months in barrels, 20% of which are new. The wine is bottled by gravity. cépage : 100% pinot noir
