Assembly : 90% merlot - 10% cabernet franc. vinification : harvested by hand with sorting. for a vinification adapted to the strict potential of the harvest, pavie-decesse is vinified in 3 thermo-regulated wooden vats, with a 3-week vatting period. Malolactic fermentation in barrels. 18 to 24 months in new barrels. Racking every 3 months. Final blending just before bottling, without fining or filtration. TASTING : A beautiful, evolving ruby color with violet highlights. A nose of fruit that begins to fade, giving way to evolving aromas of spices, chocolate and wood... A complex and varied aromatic palette that gives great pleasure. A straightforward attack on the palate that evolves on fine tannins providing a fine, round body. This wine is very drinkable.
