In a few words ...

The harvested grapes are sorted on a vibrating table, then by hand, just before fermentation in thermo-regulated concrete vats. Maceration lasts 15 to 30 days, then 80% of the wine is aged in oak barrels, half of which are renewed each year, the other half being used for two wines.
