First sorting in the vineyard. Sorting on vibrating tables. Gravity-fed into 25-90 hl stainless steel/concrete vats. Pre-fermentation maceration at a low temperature of 8°c. Manual punching of the cap. Maceration time: 30 to 35 days. Direct run-off into barrels by gravity. Fml in barrels. Aged 16 months in barrels.
