The grapes are placed in barrels directly after destemming, and remain there for 4 to 6 weeks, during which time they undergo alcoholic and malolactic fermentation. To ensure homogeneous fermentations, the barrels are "rolled" three times a day at a rate of 10 to 15 turns. This process allows the lees to be put back into suspension, resulting in a wine with plenty of volume and body. Similarly, wood extraction is smoother and the fruit is respected.
