In a few words ...
The grapes are placed in barrels directly after destemming, and remain there for 4 to 6 weeks, during which time they undergo alcoholic and malolactic fermentation. To ensure homogeneous fermentations, the barrels are "rolled" three times a day at a rate of 10 to 15 turns. This process allows the lees to be put back into suspension, resulting in a wine with plenty of volume and body. Similarly, wood extraction is smoother and the fruit is respected. Very deep violet color.
Aroma
The nose expresses intense aromas of blackcurrant, morello cherry and violet, with spicier, toasty notes on aeration.
