The winemaker
Château Chauvin, a grand cru of Saint-Emilion, is located north of the appellation. Chauvin is in the hands of the Ondet family since 1981 and is now managed by Ondet Beatrice and her sister, Marie-France February. Beatrice is a fervent advocate of women winemakers, it considers their wine as more subtle and elegant. Chauvin area is stretched on a single plot of 15 hectares planted with Merlot, Cabernet Franc and Cabernet Sauvignon. The grapes are harvested by hand and vinified in temperature regulating tanks. The wine is then aged in oak barrels.
