The winemaker
2 varieties are at the origin of this wine: the overwhelming majority of Semillon Sauvignon and a touch of around 10%. These grapes are picked in several passages, to pick up the grains concentrated by noble rot, ie Botrytis fungus that concentrates flavors and materials. After a slow pressing, fermentation takes place in oak barrels before a double aging: 9 months in wood, 9 months in vats for the vintage uniform.
