The winemaker
Originally from and passionate about the Beaujolais region, Nathalie and Éric Boyer settled at Château du Gimarets in 2007 to produce a natural, expressive wine with the subtle aromas of their native region. This romantic, two-hundred-year-old château is surrounded by greenery, leading to the estate's vineyards.
Château des Gimarets cultivates 3.75 hectares of Gamay vines exclusively in the Moulin à Vent appellation. The vineyard is in a single block around the Château. The soil is homogeneous, very typical of the Moulin à Vent appellation: granitic arena, derived from the degradation of fairly crumbly pink granite. The soil is fairly "thin", acidic and rich in manganese. The vines are goblet-pruned. Planting density is high: 10,000 vines per hectare, to create competition between vines, which is beneficial for grape quality. The average age of the vines is 65 years.
Nathalie and Eric BOYER have been cultivating the vines organically and biodynamically, as well as with herbal tea sprays since 2017 (certified in 2020). The vines are grown with respect for the environment and the plant's vegetative cycle. Harvesting continues to be done by hand to ensure optimal preservation of the bunches, better sorting and guaranteed quality. Vinification is attentive to the natural evolution of the wines. After bottling at the Château, the wines enjoy a long rest, improving year by year in the estate's 17th-century cellars.
