The winemaker
For our first two harvests, 2012 and 2013, our vineyard of just 8 ha consisted of 3.24 ha of Chablis and 4.50 ha of Chablis Premier Cru Fourchaume. We had the opportunity in spring 2014 to take over an existing vineyard of 3.41 ha of Petit Chablis and 5.21 ha of Chablis... doubling our surface area. When all the vines still leased today return to the Domaine, our vineyard will reach 22 ha by 2020: 4.41 ha of Petit Chablis, 11.05 ha of Chablis, 1.48 ha of Premier Cru Beauroy and 5.17 ha of Premier Cru Fourchaume... A nice little family estate.
Minerality is truly the signature of Chablis. It's the result of a natural balance between clay-limestone soils on the Kimmeridgian geological plateau, which give the grapes their characteristic mineral flavor reminiscent of chalk, and a continental climate.
