The winemaker

"Zaepffel's name alone bears witness to the family's centuries-long involvement in the wine trade. In Alsatian, Zaepffel comes from the word "uszzapffen", meaning "to draw from the barrel". This know-how has been part of the family crest since the 16th century: 1559 to be precise. Almost half a century later, Maximilien decided to take up the torch. A new wind is blowing through the family vineyards, with the conversion to organic farming and controlled yields for a guarantee of quality. A winegrower by birth and passionate at heart, Maximilien is particularly respectful of the heritage of his elders, and strives to perpetuate tradition while bringing his own sensitivity and passion to bear. The whirlwind of life brings him the dynamism to make the vineyard flourish... So he decided to take over the winemaking after three decades of selling grapes, combining modernity and tradition (wood and stainless steel vats). He makes a point of limiting inputs. To achieve this, he took over an organic winegrowing estate that was ceasing operations. Guided by the know-how he had acquired over more than a decade as vineyard manager and cellar master in several wineries, he decided to vinify his own wines, producing structured, well-balanced products that express his different terroirs. He embodies a new, young generation that is leading Alsace wines into a new future. He draws on the unique granite terroir of Dambach-la-Ville and its Grand Cru Frankstein. This soil offers exceptional minerality. It's your turn to be surprised."
